
Vegan | Gluten free | Serves: 8-10 balls
A simple and tasty snack that you can batch make for the week and store in the fridge. You will need a food processor and a few ingredients listed below.
Ingredients
- 1 cup raw almonds or cashews
- 1 cup pitted medjool dates (soaked in hot water for 10-15min and well-drained)
- 3 tbsp almond or peanut butter
- 3 tbsp cacao powder
- 1 tbsp melted coconut oil
- 1 scoop (30g) of vegan protein isolate of your choice (optional, but it will increase the protein content of the recipe) – I used vanilla vegan protein
Method
- Place all ingredients into a food processor and process until thick and combined
- Roll into balls of preferred size. I was able to make approximately 8-10 balls
- Store them in the fridge for 5-6 days.
