This is one of my favourite sweet recipes for when I want something simple and quick to prepare as it requires simple ingredients that we normally have at home. These muffins are great to have for breakfast, afternoon snack or pre-workout if you allow enough time for digestion.
Ingredients
- 3 large ripe bananas
- 1 and 3/4 cup almond meal
- 1 tsp baking soda
- 2 tsp baking powder
- 1/4 melted coconut oil
- 1/4 coconut sugar
- Chopped Walnuts
- Cinnamon
- Pinch of salt
Method
- Mix dry ingredientes – almond meal, baking powder and baking soda.
- In a separate bowl stir coconut sugar, coconut oil and mashed bananas until combined.
- Mix banana mixture and dry mixture adding cinnamon, salt and chopped walnuts.
- Mix until all ingredients are combined.
- Pour batter into a muffin tray and bake in a preheated 180°C oven for approximately 25-30min.
Variations:
- You can add blueberries or vegan choc chips for different versions and both will taste amazing
- You can add more sugar if you have a sweet tooth
- I often sprinkle cinnamon and sugar on the top
