Banana Muffin | Vegan and Gluten free


Vegan | Gluten free | Serves: 6

This is one of my favourite sweet recipes for when I want something simple and quick to prepare as it requires simple ingredients that we normally have at home. These muffins are great to have for breakfast, afternoon snack or pre-workout if you allow enough time for digestion.

Ingredients

  • 3 large ripe bananas
  • 1 and 3/4 cup almond meal
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/4 melted coconut oil
  • 1/4 coconut sugar
  • Chopped Walnuts
  • Cinnamon
  • Pinch of salt

Method

  1. Mix dry ingredientes – almond meal, baking powder and baking soda.
  2. In a separate bowl stir coconut sugar, coconut oil and mashed bananas until combined.
  3. Mix banana mixture and dry mixture adding cinnamon, salt and chopped walnuts.
  4. Mix until all ingredients are combined.
  5. Pour batter into a muffin tray and bake in a preheated 180°C oven for approximately 25-30min.

Variations:

  • You can add blueberries or vegan choc chips for different versions and both will taste amazing
  • You can add more sugar if you have a sweet tooth
  • I often sprinkle cinnamon and sugar on the top
